Oyster Sauce Chicken

Ingredients
Chicken wings - 1 kg
Oil - 3 tbsp
Oyster sauce - 2 tbsp
Pad Thai Sauce - 1 tbsp
Soya sauce - 1 tsp
Red chilli sauce - 1 tsp
Salt for taste

For Garnishing
14 -16 black olives

Method
Mix all the sauces together. Sprinkle salt on the chicken wings and keep aside for 10 minutes. Use half the quantity of the sauce to marinate the chicken wings (and leave the other half for use once the chicken wings are cooked tender) Marinate the chicken wings with the mixed sauce and leave aside for 2-3 hours. Heat a non-stick large pan and add the oil. Lower the flame and add the chicken wings. Increase the flame to medium and cook the chicken wings for 3-4 minutes. Lower the flame again, cover with a lid and cook for a further 2-3 minutes or until the wings are cooked tender. Put off the flame, mix in the remaining sauce and garnish with the olives and serve hot with bread rolls.
